  • 1½ cups (150 g) grated zucchini (unpeeled, excess moisture patted dry)

Instructions

Step 1 – Prep & Grate Zucchini

Wash and trim ends off zucchini. Grate using a box grater (medium holes). Lightly pat with paper towels to remove excess moisture. Set aside.

Step 2 – Mix Dry Ingredients

In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

Step 3 – Combine Wet Ingredients

In a large mixing bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla until fully combined. Stir in grated zucchini and any optional mix-ins.

Step 4 – Fold Together

Gently fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until no streaks of flour remain—do not overmix.

Step 5 – Bake
