Ingredients
Dry Ingredients:
- 2 cups (250 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¾ tsp fine salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg (optional)
Wet Ingredients:
- 2 large eggs, lightly beaten
- 1 cup (200 g) granulated sugar
- ½ cup (100 g) brown sugar, packed
- 1 cup (240 ml) neutral oil (like canola or vegetable oil)
- 2 tsp pure vanilla extract
- 1½ cups (150 g) grated zucchini (unpeeled, excess moisture patted dry)
Optional Add-ins:
- ½ cup chopped walnuts or pecans
- ½ cup mini chocolate chips
- ¼ cup raisins or dried cranberries
Instructions
Wash and trim ends off zucchini. Grate using a box grater (medium holes). Lightly pat with paper towels to remove excess moisture. Set aside.
In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In a large mixing bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla until fully combined. Stir in grated zucchini and any optional mix-ins.
Gently fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until no streaks of flour remain—do not overmix.
Preheat oven to 350°F (175°C). Pour batter into a greased 9×5” loaf pan. Bake for 50–60 minutes, rotating pan halfway through. Test doneness with a toothpick—it should come out clean from the center.
Cool in pan for 10 minutes, then transfer loaf to a wire rack to finish cooling. Slice and serve warm or at room temperature.
Notes
- For extra moisture: Add ¼ cup plain Greek yogurt or applesauce.
- Use frozen zucchini? Squeeze out all excess water before mixing.
- Storage Tip: Keeps well wrapped at room temp or in the fridge.
- Serving Idea: Great with a smear of butter, cream cheese, or a sprinkle of powdered sugar.
- Gifting Tip: Wrap half-loaves in parchment and tie with twine for a charming homemade gift.
