Cake:
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 cup boiling water
Buttercream Frosting (1920s Style):
- 1 cup unsalted butter (room temperature)
- 3–4 cups powdered sugar
- 2 tablespoons whole milk
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
For the Cake:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, milk, melted butter, and vanilla extract until smooth.
- Gradually stir the wet mixture into the dry ingredients until fully combined.
- Slowly pour in the boiling water, stirring gently. The batter will be thin.
- Divide evenly between pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
For the Buttercream Frosting:
- Beat the butter until creamy.
- Add powdered sugar one cup at a time, beating well.
- Mix in milk, vanilla, and salt, and beat until fluffy. Adjust consistency with a little extra milk, if needed.
- Frost the cooled cake layers and decorate as desired.
Notes
- For deeper chocolate flavor, try adding 1 tsp of instant coffee to the boiling water.
- Chocolate ganache makes a great alternative to buttercream for a richer finish.
- Make the cake a day ahead for enhanced flavor and texture.
